2020 Saperavi

Winemaker notes:

Handpicked. Crushed and destemmed into stainless steel. Alcoholic fermentation with hand plunging twice a day in stainless steel vat for 7 days. Pressed into a combination of older 80% French and older 20% American oak barrels for 12 months maturation. Post MLF returned into same barrels for maturation. Alc/vol: 13.9%  Regular red wine grapes have dark skins, but clear flesh. In contrast Saperavi is a red wine grape with dark skins and dark flesh.

Tasting notes:

A profound wine with amazing fruit and acidity. The tastes echo dark fruits, liquorice, spice, vanilla, and toasty flavours, with a smooth texture and plentiful acidity.  

Food Match:
Matches well with a variety of dishes such as roast lamb, roast pork, pork and haloumi skewers, hard cheeses, beef lasagne and bolognese and dishes with mushrooms.
