Winemaker notes:
Whole bunch pressed, cold settled, clean juice racked to French Oak Barrels, indigenous yeast alcoholic fermentation. Lees stirred post ferment once a fortnight. Alc/vol: 13.5%
Ageing:
5 months in French Hogsheads and Barriques both new (25%) and used.
Tasting notes:
This wine shows vibrant stone fruit flavours and just a hint of ginger spice that are true to variety. Barrel fermentation adds an extra dimension. Long, voluptuous and seamlessly balanced.
Food Match:
Matches well with a variety of dishes such as souvlaki, lamb curry, thai salads, pasta with cheese, yellowtail sashimi, a spicy tuna roll, roast turkey, pasta with seafood, sea bass and a salad with chicken.
