Winemaker notes:
Crushed and destemmed into stainless steel, alcoholic fermentation with hand plunging twice a day, stainless steel vats for 7 days. Indigenous yeast.  Pressed into HH’s and R&R post MLF into same barrels for maturation. Alc/vol: 13.5%

Ageing:
9 months in French and American Hogsheads both new and used.

Tasting notes:
It is elegant and silky with a vibrant and juicy palate of blackberries and ripe plums supported with a hint of dark chocolate and spice.

Food match:
Matches well with a variety of dishes such as: Duck or other Game Meats, Shepherd’s Pie, Pasta with Sausage, Steak, Chicken Parmigiana, Mustard or Mushroom Beef Tenderloin, Boeuf Bourguignon, Prime Rib and Lamb Shanks, Chops or Steaks.
