Winemaker notes:
Whole bunched pressed, cold settled, clean juice racked to French Oak Barrels, indigenous yeast Alcoholic fermentation. Lees stirred post ferment once a fortnight. Alc/vol: 12.0%
Ageing:
8 months in French Hogsheads and Barriques both new (25%) and used.
Tasting notes:
This wine shows exquisite subtleties of flavour and texture. It has wonderful concentration of stone fruit and citrus flavors with a slight hint of oak, and a further dimension of added structure through the effect of battonage.
